Muesli to die for!!

I am in love with my mamas  muesli at the moment.. I made some for myself the other day and its SOOOOO good!! I thought I would share it  so you can enjoy it too!! 






6 cups rolled oats
1/2 cup raw pumpkin seeds
1/2 cup sunflower seeds
1/2 cup natural almonds
(chopped)
1 Tablespoon ground cinnamon
1 cup honey ( I used a mixture of honey and molasses)
3/4 cup canola oil

Preheat the oven to 180 degrees C. Place the oats, seeds, almonds and cinnamon in a large bowl and mix to combine. Stir the honey and oil in a saucepan over low heat for 2 mins or until melted and combined. Add the honey mixture to the dry ingredients and mix to combine.

Divide the muesli between two baking trays lined with baking paper and spread evenly. Bake for 20-25 mins, stirring occasionally or until golden. 
Makes 8 cups.

Tips

Allow to cool completely before storing.
When cool it will be a solid mass. Break it up into small clusters to store.
Add dried fruit once it has been cooled and broken up
Try replacing 1 cup of rolled oats with 1 cup of coconut

Our Weekend


This weekend was the first full weekend we had enjoyed as a family since Theo was born... Tim has been working 80 odd hours a week lately and its been just crazy!!




We enjoyed a romantic dinner under the veranda at home on Friday night.. complete with fairy lights and candles.. it was blissful and so much nicer than going out!! We enjoyed the most delicious scallop and prawn risotto thanks to this recipe from Sophie Gray - yummo!!!!










On Saturday night we celebrated Theodore's 6 week birthday with a fish and chip dinner up Te Mata peak where we watched para-gliders and enjoyed a gorgeous sunset. 







Sunday we spent enjoying the wonderful Art Deco weekend in Napier... such a delightful experience!! Next year we are determined to dress up and enjoy it properly!!

Our Place



My best friend is a florist... I know right! How lucky am I!!! Especially when we go to the flower market together and I pick up a few blooms super cheap... she did the most fantastic arrangement for our front entrance..  Thanks Jaqui.. Love you!!

One Month already???



Can you believe that ONE MONTH has already gone??? I am enjoying every single minute with this boy.. he is a delight.

It has been a lovely month... I have taken it quietly, enjoying a precious babymoon snuggling this (not so wee) bundle and getting to know our 6th child.


On that note, I have to thank everyone who has enabled me to do this.. Firstly my big kids and my precious hubby - you have all made things easier for me..wonderful family members who took the older children for the odd night and the family and friends who made meals. THANK YOU!!!

I am slowly venturing out and returning to my normal routine and it feels good.

We are truly blessed...














STATS:  5kg,  57cm and utterly scrumptious.



Happy 1st month birthday Theo.. you are treasured beyond words.
